After an embarrassing amount of years raising chickens and having fresh eggs, I have finally found a way to boil fresh eggs and they peel…perfectly.
I’ve tried the poking the hole in the egg, the boil and dip in cold water and even the aging egg method. None of them worked. For years this has been a source of sadness because I love Deviled Eggs! I love boiled eggs as high protein snacks and I love egg salad sandwiches.
So here is what really works: Steaming them. The best way is to buy an Instant Pot. It is now my favorite cooking appliance. If you buy one, get the Duo since it does so much more than the regular pot. More on that later.
If you don’t have an Instant Pot, the technique is simple.
- Fill a large pot with an inch of water. Bring to boil.
- Add the eggs to a strainer or steamer pan inside the pan not touching the water.
- Steam for 15 minutes.
- While steaming prepare a bowl with ice water.
- Scoop the eggs into the ice water and let them sit for another 15 minutes.
I tried with just a few eggs because I was convinced I’d end up with egg mush…I wasn’t a believer, but it worked!
